Healthy, Hearty Chicken Chili

Recipe inspired by: Gimme Some Oven 

What I love about soups and chili is that you can pretty much load them up with whatever you love. It is so easy to make these veggie-packed and meatless if you're trying to be good for the holidays (hahahaha that's a funny thought, right?)

This recipe as is will provide you with at least 6 servings. If you're like me and ALWAYS go for seconds, then I can't promise anything... but it's a life-saver for the week and freezes well.

Curl up, grab the chips and salsa, & enjoy!

What You'll Need
> 6 cups of chicken broth
> 4 cups cooked & shredded chicken (equals about 2 large boneless chicken breasts)
> 2 15 oz. kidney beans (original recipe calls for Great Northern beans but I chose Kidney because they're high in fiber)
> 2 cups salsa verde (I left this out the first time I made it & it was still awesome!)
> 2 tsp. ground cumin
> 1 tsp chili powder
> 1 1/2 cups corn
>1 cup finely chopped onion
> 2 avocados (this is for garnish so choose how much you like & grab some more for the rest of your servings throughout the week)
> sour cream (again, to top with so your call how much!)
> Tostitos - because, we'll they're amazing

What To Do
> Bake chicken, covered, in the oven at 425 for about 30 - 40 mins (I just add some salt and pepper to the chicken before placing in the pan)
> While the chicken is baking, chop your vegetables
> Put the chicken broth, beans, spices, and vegetables in a pot and bring to a boil then turn down the heat to a light simmer while you're waiting for the chicken to be done
> Shred the chicken once it's cooked and add to the pot
> Serve while adding avocado, sour cream, and chips to taste

The Easiest Football Sunday Pulled Pork Sliders


Original recipe: Crock Pot Girl

I am CONSTANTLY thinking about the weekend. And in the fall the weekend = Football. And Football = Eating. A lot. Which is only my favorite thing to do in the whole world. So when I found this recipe I made it the next day; literally.

This recipe is only a few steps and gives you an excuse to sit on your ass for 10 hours while getting lost in Netflix and STILL consider it "cooking". All hail the crock pot.


What You Need
> At least a 6 quart slow cooker/crock pot
> 4-6 lb Pork Butt (shoulder - with or without bone - with bone is tastier)
> 14 oz. can of beef broth
> 1 medium onion (large if you're an onion lover)
> 2 16 oz. BBQ Sauce of your choice (I did Sweet Baby Ray's Honey) - 1 bottle is used once the pork is one and the 2nd is for serving (everyone asked me if there was more sauce to dip in)

What To Do
1. Wash the pork with water, pat dry, place in the slow cooker
2. Take the onion & cut it into quarters, place over the pork
3. Pour the 14 oz. can of broth over the pork
4. Place the cover on your crock pot & cook for 8-10 hours on Low (if you're in more of a hurry & you've already watched everything on Netflix, you can do 4-6 hours on High.)
5. Remove the pulled pork from the pot - it'll be falling apart and that's a GOOD sign - place in a large bowl and start shredding the pork with two forks
6. Discard bones & grossness
7. Cut up the onion into fine pieces & mix back in with the pork
8. Pour in the first bottle of BBQ sauce, mix & place back in the pot to reheat
9. After about 20 minutes taste - add more BBQ sauce if desired
10. Distribute the pork onto sliders & EAT!

Things I Would Try Next Time
> Only cutting up half the onion & adding back into the pork in step #7 because I'd like to make pickled onions to add to each slider before serving
> Shred carrots & add as a garnish
> Make my own coleslaw & add to each slider or have as a side dish

The Evolution of a Twenty-Something's Birthday List

So today is quite a day. Not because it's a Monday. Not because my boyfriend's cousin got engaged. Not because Nutella's on sale at Stop 'N Shop... 

BUT BECAUSE I'LL BE FREAKING TWENTY-SIX IN ONE MONTH. 
I REPEAT: T W E N T Y - S I X

No, this is not a post where I layout all the reasons I feel "old" (and anger half of my readers) or talk about all of the things I want to do before I turn 30. I am just purely freaking out that I'll be 26... 

At that pivotal moment when I left my teenage years and entered the realm of my 20's, I like to think that I was realistic when it came to making my birthday list. Now, you might be saying, "Samantha, seriously? A birthday list when you're going to be twenty?!" Fair enough... I should preface that birthdays are a big deal in my family. Always have been. It isn't just a day but a "season". For those that are close to me now may understand why I'm a complete BRAT when it comes to my birthday. I choose to not use the word "diva". I'm more reasonable then a diva; or at least I am in my own head.

So the other day my darling, beautiful mother asked for my "list". I was honestly a bit stunted at first. Why? Because 1) I can't believe it's October (let alone almost Halloween) 2) Hell, summer felt like it lasted five minutes and 3) I hadn't had my coffee yet. So I reread her email and it dawns on me that she is referring to my birthday list. A list made many times. A list that usually gets passed throughout the family (I'm the first born on my mother's side, can't help it). A list I hadn't thought about yet, at all.

So I pondered...

When I was turning 21 all I wanted was a glittery, hand-painted goblet that I could take out and abuse throughout my night at trashy bars. That's it! Just a simple, little 'ole cup. And maybe a crown. And a sash. But that's it.

22 was a great year because the rest of my friends were finally 21 as well. This meant planning a happy hour at a not-so-nice bar where you had to have AT LEAST 30 people attend. THE PRESSURE. Like, who is cool enough for that? If I hadn't been at a college that thrived off bar hopping, I would've been happy-hourless. For sure. The list also included family-friendly items, such as: a Forever21 gift card, a Starbucks gift card (because I didn't know I was a Dunkin' girl yet), new Uggs, money towards my upgrade to get the new iPhone, and/or just straight CASH. So I  had money to spend at the happy hours, at Forever21 so I look cute at the happy hours, and making my friends their own goblets and sashes. 

23 & 24 sort of blend together. The bar outings are still hot on the to-do list. The bars a tad bit nicer which come with long lines. A long line when you're born in November - the END of November - isn't always the cat's meow. You shiver and wonder why the three 12-year-old-looking-somethings just got in before you. Rude. The pre-game is everything. You start to realize that actually getting to hear what your friends are saying and pee in a warm, clean bathroom is high on the priority list. A late-night dance party is still the best part though.

23 and 24's birthday lists were still full of gift cards but weird things started to happen... places like Banana Republic and J Crew started to become more appealing for everyday wear. (Forever21 is only made for people that are a size 2 for life and don't gain weight from drinking beer, eating free wings, and 3am pizza... WHO ARE THESE PEOPLE?!) And you KNOW you can't afford that crap on your own. When you received a gift card you PRAYED it was for at least $50 so you could get something more than just a nice t-shirt for work. Maybe something to help pay for the $100 dress pants you've been avoiding. Or the ever versatile "black work dress" (with matching blazer). 

The Starbucks and Dunkin' gift cards become actual life savers. It's like the card comes with a flotation device. The few days before you get paid, the ready-to-order egg sandwich is your main meal. You're practically eating with the Barista on her lunch break. Why? Because the super cute, chunky knit sweater was on sale at Banana and you were out of gift cards, duh.

Ah, 25... VEGAS.

Yes. My girlfriends and I went to Vegas. We wanted to celebrate this milestone all together and it couldn't have been more perfect. We've all been working for a bit now so we could afford to splurge on ourselves. The power and maturity that comes with being in control of your own trip was both amazing and oddly frightening. I mean, we were going on trip together. By ourselves. TO VEGAS. You do the math.

My list for 25 was small. My email included things like: work clothes, "things" for the apartment, money to get my hair done, and money for Vegas. Money to get my hair done? Seriously? Yes, I would have rather made sure rent was paid and get my $20 sushi then make sure my hair didn't look mousy. I'm just as horrified as you are, don't worry. 

You want to know what I asked for this time? Boots, underwear, and a new glass set of Tupperware. (Glass because plastic is bad for you, of course. And apparently I care about that now...) 

That's right folks. Martha Stewart, make room in your craft room because I'm comin' in HOT. Everyone get the blenders and need-a-new-washer/dryer fund ready because 30 is just around the corner... 

and I can't wait :)



Getting older is a blessing and a privilege. EMBRACE IT!

Chapter 2


Ella stared into her closet. And then stared some more, Seriously?" She rolled her eyes in frustration. Every girl has her getting-ready struggles but this wasn't because she couldn't find something she felt comfortable in, she had everything but. "I have 14 pairs of yoga pants, Rex. 14! And not a single skirt. Pathetic." Rex whined and licked her hand.

She grabbed the wine she had been sipping to calm her nerves, "I must have something. I used to be fun..." She crawled and scraped to the back of her closet and pulled out a box. In big black letters it had the word "COLLEGE" scribbled on it.    "Perfect, I wore dresses in college all the time." She felt giddy, something she hadn't felt in ages, and ripped the box open.


She sorted though some clothes, dusty posters, and small framed pictures covered in jewels and glitter. Ella pulled out a black dress and a hot pink skirt. Her and Rex exchanged a look, "How in the world did I ever wear stuff like this?" She checked the tag, yep about two sizes smaller than what she wore now. She grabbed more wine then continued to sift through the past...

Ella stopped immediately.


There he was; Luke Mason. Looking handsome as ever in the small pink frame. He must have only been 19 or 20. His hazel eyes stared back at her. His light brown hair had hints of blonde and he was tan, really tan. She remembered what his skin felt like when it'd been kissed by summer - warm and smooth with a hint of salt. The ache in her chest crept back, an ache she'd worked long and hard to control. She closed her eyes and blocked out the feeling.


"That's it." She chugged the wine and got ready.

McKenna kicked back the rest of her drink, "If Ells is a no show I'm demanding free yoga classes and the secret to however she gets that ass."

The place they chose for drinks was the nicest place in town. It was the place you went to for a steak, martinis and creme brulee. It had music that came on at 10pm every Saturday night and was known for turning into a college-like party for adults. This lead to mounds of town gossip. Vodka and dancing; the typical recipe for disaster. But McKenna wasn't taking Ella to some pub to get a damn $6 brew. The girl needed a good hard drink and to get hit on. A lot.

"Oh she'll show. I left Braydon practically jumping for joy because he was able to go to the pub with the guys to watch the game. I mean is it so bad to have a nice meal with me at home and catch up on our shows? Are we getting like those married couples that hibernate and never do fun stuff? I mean, I think we do fun stuff. McKenna? Hello? What is it?" Lainey turned toward where McKenna was staring.

"Holy shit," McKenna hung her mouth open.

Ella walked in. Lainey and McKenna weren't the only ones to notice. She wore a black dress that looked as if it was slowly dripped on - every stitch perfectly in place. It hugged her thighs and thin waistline. Her breasts swelled against the tight knit fabric. It hung low showing cleavage she seldom revealed. It was sleeveless leaving her toned arms free. Her legs had no end. Her lips were plump and glistened pink. Her hair tasseled.


Ella's confidence hung in the air as she scanned the room for her party of two. A beautiful party of two.  She could smell the fresh herbs, steak, and light conversation - being out felt good. The host ladled her eyes over Ella before asking her if she had a reservation. Ella gave her a silent pat on the back knowing all of the energy and pre-dinner wine into getting ready would more than pay it off. "It's okay, I see my friends right there..."

"McKenna, you're drooling." "Damn right I am. Holy shit, Ells! Someone came to the play tonight. Mamma like!"

They were on round the third round of drinks when Lainey's cackle and McKenna's wandering eye began to overtake the conversation. Ella knew McKenna was a lost cause, already checking out the bartender with a deviating stare. McKenna got what she wanted - always. It was the best quality about her and what Ella loves the most. Fearless and endless longing for life, the next thing, the ever-after. McKenna flipped her jet black hair, "His arms are delicious. Ells, do you see those? You want?"

Ella gave a loving eye roll, "I'm making a bathroom stop, any other takers?" The cackling continued, "guess that's a no."

Ella made her way to the back of the restaurant, passing the succulent plates of food and flowing drinks. A hint of garlic hung in the air which she couldn't find any more perfect. Yes, it's good to be out. 

She passed a couple who were clearly on their first date as the girl hid behind her nervous laughter and the guy clutched to his draft beer. To her left she found a beautiful couple with matching silver streaked hair. They drank each other in and sat quietly. The hope in age warmed Ella as she continued her walk.

"Ah, a line. Feels like college", she said to herself as she stood behind the three ladies in front of her. It inched quickly and soon enough she was washing her hands and getting herself ready for the inevitable fourth round of drinks.


"Ow!" The pain was immediate. Her right hand flew to her forehead where she was hit and her left stopped the rogue door before it came back around. She needed a minute to recover. God damn, it hurt.


"Shit. Are you okay?" He lunged the separating five feet between them, "Here, here sit down. There's a chair in that corner, come."


She looked up and was hit again with a wall of light cyan blue. He stared back at her face and took in the damage. She couldn't look away; her aching head suddenly stopped throbbing. He grazed the already light purple bruise with his thumb. His knuckles rested on her cheek and the sensation was... "Ah, yeah. That'll be nice and pretty tomorrow," she winced.


He sat back on his heels and brushed the hair out of her face, "It already it is."

Her breath hitched and she was suddenly very aware that a beautiful man was staring at her as she hunch in the corner of a crowded restaurant. She knew she had to pull it together. Damnit Ella, speak!

"I think I'm okay now. Thank you for checking. I should get back to my table," He helped her get up and his hand lingered on the small of her back. "Let me walk you over. You know, in case you faint and I have to save the day again." She flashed a wicked a grin as she rose and made her way to the table, "I do believe you're the reason I'll have an apple sized lump on my forehead tomorrow, Sir Day-Saver."

He got a clear view from the back right window. Who is he? Luke's fists were balled so tight his knuckles were white. The lines in his forehead were deep with anger. He saw the man leave the table and wave to her. They don't look like they've known each other long. Good. It's going to stay that way. He took a swig from the small bottle that was housed in his back pocket. The burn in his chest as it went down was bleak at best. He was numb and that's how he liked it.

The More Bruschetta The Betta


I have a personal obsession with garlic & onions so when they're paired with slabs of bread toasted with olive oil, I kind of lose respect for all other appetizers...

Just kidding - Pigs in a Blanket are AWESOME.

The great thing about this recipe is you can change it up to fit your taste as you go. If you're not the biggest basil fan, you can minimize what you add. If you don't want your mouth on sweet, sweet fire from the onions and garlic, you scale back. 


What to Buy: Party of four 

> 8-10 Roma tomatoes (gauge how much your crowd can eat & go with your instinct)
> 5 cloves of garlic
> 1 small white onion
> A hefty handful of basil - I add this to taste so use your own judgement
> 1 small lemon
> Olive Oil (a yummy, delicious kind if you're down to drop the money)
> Salt/Pepper
> 1 loaf Semolina Bread
 


What to do: Bread Crisps

Have these cook while you're making the bruschetta if you are serving right away. If you aren't serving right away, I'd wait and make these 30 minutes before your dinner party.

Tip: If you don't have time to make your own crisps, try these. I could eat them as chips. I mean, well, I do.


> Pre-heat oven to 425 degrees F
> Slice up the Semolina bread - use your judgement on how thick you'd want your cisps to be - I generally do about 1/2 an inch thick
> Mix some olive oil & parsley in a bowl
> Then spread a light layter over each side of the bread
> Place a single layer on a cookie sheet & bake for 6-8 minutes - filp halfway through
> Let them cool

What to do: Tomatoe-Garlic-Onion-Goodness

Tip: This tastes best if allowed time to sit. If you have an evening party then makes this early in the morning and allow all of the ingredients to get happy over the course of the day.


> Chop and dice up the tomatoes & onions - put in mixing bowl
> Mince all of the garlic & add to the bowl
> Add the olive oil, salt & pepper
> Mix
> Chop up your handful of basil and add to the mixture
> Squeeze half of the lemon over the mixture> Mix
> Taste test & add anything needed for your liking> Cover and place in the bowl in the fridge


Scoop some heaven on your crisp & EAT!

The Little Things: Lobsters & Leprechauns


[ Ladies & Gents meet my other half, roommate, best friend & Dish man. I've had the honor of having this bud in my life for 6 years. Here he is showing off his Irish pride during our weekend in Hoboken for their St. Patty's. ]


[ This past Saturday I had the morning to myself - I woke up early & did some errands before the gym. It was about 45 degrees & absolutely beautiful out. I'm becoming more and more of a morning person with age. ]


[ This is me & Bob's favorite IPA. It was my appetizer to a boastful day of drinking on Saturday for Stamford's St. Patty's. ]


[ This lobster happened to, not only be adorable but, become my friend while I was waiting for my sushi. Sorry pal, you're also my top 5 favorite foods of all time. #lobsterrollsfordays ]
